Sometimes a simple combination can be so good that you can’t let it alone. That is certainly true of this little combo, that I could eat for lunch every single day all summer long. Having a garden makes it easy certainly, but even if you have to visit a farmer’s market or veggie stand for the ingredients, you can enjoy the same bursting-with-flavor freshness for your lunch.
Take a couple slices of good whole wheat bread and toast lightly. I like to let it cool a bit so that the lettuce doesn’t wilt as much. Spread some mayo on the bread.Next, put on a nice thick layer of fresh lettuce, like this red leaf.Then, cucumbers. I like to slice them lengthwise because they stay on the bread better. Give them a nice sprinkle of kosher salt and a few grinds of pepper.Then, a layer of fresh basil leaves.Then the second slice of toasted whole wheat bread, also spread with some mayo.And then – and then and then and then, enjoy! You might better just make two of them right from the start.

I love basil …. I’m going to have to try this! But I was so hoping today for adorable pictures of the grandkids helping in the garden. ….. but even your recipe photos are enjoyable! I just had grilled shrimp on whole wheat pasta with basil and feta cheese with TAZO iced tea! It was quite satisfying! (sorry, I have to use you blog for twittering ….. you know I’m at least two years behind on these things.)
Now see, I don’t have any cucumber, or basil, or lettuce, or bread. But I do have mayo. I guess I better add a few thing to my shopping list. :)

Oh I love cucumber sandwiches!! I love them also with creme cheese instead of mayo. Both are yummy!!!!

I am pampering some little cucumber vines on my deck (not hot enough in the Northwest for them to be ready yet). When the blessed day comes, I hope to be using cucumbers for everything.

I remember eating cucumber sandwhiches with my grandmother. However, we never added the lettuce or the basil. I might have to try that.

wow, this looks yummy! I make a cucumber tea sandwich with nothing but white bread, butter, cucumber and salt and pepper. Yours is so much more interesting…love the basil in this!

Oh, that’s totally doable. As I don’t have mayo, I could use butter, and instead of toast (none at home) I could make a tortilla or bake some bread.
