Coconut Blondies

There is something about my husband that you may not know.  The man cannot live without cookies.  A lack of cookies causes him to become despondent and grouchy.  A lot of things make him grouchy actually, but we won’t get into that just now.  To prevent a state of grouchy despondency, I try to keep some cookies around all the time. 

13If you hang around here much at all, you may have noticed my fondness for bar type cookies.  The reason for that is simple – they are fast.  Mix them up, throw them all in a pan at the same time and get the whole batch baked at once.  That is important if you have other things to do, like say, take 347 photos of the same Pine Siskin or 39 miles of garden edging to get done.  Fast is my best friend.   These are a perfect example of fast also being really good, because these are some seriously delicious cookies.  Blondies are typically a brown sugar bar with chocolate chips – these are just a little more chewy because of the coconut and the nuts are a nice crunch in that chewy texture. To stave off grouchiness, we better get started!

Preheat oven to 325º
Beat until fluffy
1 cup softened butter
3/4 cup dark brown sugar
3/4 cup granulated sugar23Beat in
2 eggs
1 teaspoon vanilla33Scrape down the sides of the bowl, and add
1 & 1/2 cups coconut
1 & 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder43When that is well mixed, add
1 cup semisweet chocolate chips
1 cup coarsely chopped walnutscoconut blondiesMix just until evenly incorporated – don’t overmix here or you will break the nuts up too much. Spread evenly in a 9×13 greased baking dish. Bake for about 35 minutes, turning pan half way through. Cool, in the pan, on a rack and cut into 2 inch squares. I’m starting to feel less grouchy myself, come to think of it. 7a

    These look great. I would warm one and top it with some vanilla ice cream and sit back and hum to myself.

  6. What husband would not like these?? In fact; this might be a perfect recipe for when my guy gets grumpy… I haven’t tried the cookie approach and he loves all things sweet, so…. I might have to give this a try…lol… :)

    Mine wouldnt like these .. amazingly he only likes crisp or chewie cookies w/chocolate or peanut butter in them .. he’s not into brownies or blondies (at least not edible blondies) .. but I will happily eat his share .. what? You didnt offer him any? Oh isnt that just like him to give me his share of something he wasnt even offered….

    Oh wow! What a great recipe!!! I’ll be trying this for sure since the man in my house is also cookie-addicted! Sometimes he’s like “maybe we should cut back a bit on baked goods, I feel a bit fatter”, so I stop baking for a couple of days… because that’s all it takes for him to go scrambling aroudn the kitchen and ask “why aren’t there are cookies around?!” HAHAHA men….
    Oh, I don’t think I’ve mentioned I tried your banana bread and I loved it, the one using your mom’s recipe :)

    i baked them at 325 for 35 minutes & they were wayyyyy undercooked. i’m popping them back in for another 5-10 minutes, at 375. we’ll see how they turn out.

    Oh georgia – I’m sorry that they didn’t turn out for you. I just made them again last week and they were fine baked at that time & temp. They are supposed to be gooey, but not terribly so. Did they come out ok finally?
