The Answer – and a Consolation Giveaway!

No one was able to come up with the answer to my TV trivia question on Monday, so I grabbed the show from YouTube, so that you can check it out.  I guess this made more of an impression on my family than the general public, because many of them knew the answer and got downright testy that I would not allow them to participate. 

So, to console everyone, myself included, I will give away 2 sets of the magnets, by random draw.  The contest ends Thursday at midnight EST, with the winner to be announced Friday.

Black Beans and Rice

It is so easy to grab some Zatarain’s or Goya when it comes to things like this. And frankly, those boxed mixes are not bad. I never left them alone though – always had to add a little [or a lot of] something. A few years ago, I decided to see if I could come up with a fairly easy way to do this; a way to get rid of all the junk in the mixes, but not have to spend half a day on a simple side dish. This is the result – a few pantry ingredients brought together in a hurry and left to simmer for a half hour or so, while you do something else.

I keep pantry ingredients like these on hand all the time. They are staples that I like to be able to grab at the last minute when I am throwing something new together, as well as being a part of some of our favorite tried and true meals. And I never let myself run out of garlic, onions, peppers or celery. So, lets do this thing.

Heat two tablespoons olive oil in a good sized saute pan, for which you have a lid. Saute, over medium heat
1 medium sweet pepper, green or red or a combo, diced
1/2 large onion, diced
3 medium stalks celery, diced
a couple sprinkles of kosher salt
The heat is a bit higher than it would be if we were just sweating the vegetables – you can get a little of color on these. Then, add chopped garlic. How much is up to you – I think I put about 4 big cloves in here. We never have to worry about vampires. Mosquitoes don’t bite us either. In any case, don’t let the garlic get browned, because it will get bitter – just let it go a minute or two.24 To this, stir in
1 15 oz. can of stewed tomatoes with chilies*
1 15 oz. can black beans, drained and rinsed
3/4 cup long grain white rice
1 & 1/3 cups water
1/2 teaspoon kosher salt
few grinds of black pepper
1/2 teaspoon dried oregano
1/2 teaspoon chipotle chili powder** [any chili powder will work]
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon dried cilantro or parsely34* You can use Rotel®, but the cans are smaller. I prefer the store brands and I think maybe Hunts might have them in 15 ounce cans now. **If you are making this for kids, or other wimpy souls, you might want to leave out the chili powder the first time you make it, to check the heat level. If you use chipotle chili powder, remember that it is usually hotter than other chili powders.

Cover the pan, and simmer over low heat for about 25 minutes, stirring occasionally and adding a little more water if it gets too dry. It is done when the rice is done. Taste and add more salt if needed.44This is great with pork chops, burgers or like this, with chicken breasts, sauteed with a little spicy stuff on them, topped with cheddar cheese for the last couple minutes of cooking.55There you go – only a little more trouble than emptying a packet, but a whole lot better. Pour yourself a nice glass of wine to enjoy while you are chopping and sauteing and stirring – life will start to look better right away!

We Have New Roomates

I guess I should announce when I am taking a weekend off – thanks for the emails asking if everything is ok. I just got busy and didn’t have time to get anything together. I cooked some really good food this weekend though, so be watching for that to show up here soon.

If you don’t follow me on Twitter or Facebook, you may not have seen my comment that Lauren is back home in Georgia and for all intents and purposes out of the Army. She has a month of leave to use up, then will out-process and be done. We are very proud that both of the girls [and their husbands, incidentally] chose to serve in the military, but not sorry that they are now out.

Larry went back to work today, after a 3 month hiatus. A cruel joke of the universe, since trout season starts on Wednesday. If he has his way, he would be busy sharpening his fish hooks or something but instead, he’s gotta go to wooooooooooooork. [a set of my photos magnets to the first person who correctly identifies the late 70s- early 80s TV show from which that quote is taken. family is not eligible for this one]

And we got some new buddies! Meet Louielouie and RicoricoThe names were chosen after intense consulations with our grandson, Mark. Louie [also known for a few months as “Woo-Wee”, until Mark could pronounce his “L”s] is named after the Betta we had until he died in December. Rico seems to be named after one of his Little People, whom you may remember from the Lego Dramas we had here last year when Ellyn and the kids stayed with us while they looked for a house.

We had an aquarium a long time ago, when Ellyn was little. We lost all of the fish after a house fire – they died from the lack of heat in their tank, not from, like, boiling, which would probably put me off owning fish ever again. We put the aquarium away and finally, I gave it to my nephew.rico2But now we have a new one and I am wondering what took so long, because I love watching these guys. Louie and Rico are Mickey Mouse Platies, and they will be joined by more fish in a few days.louie2And I can’t be entirely sure, but I think I may hear them saying something. Only time will tell about that though.

A success disguised as failure?

Hey – if White House Press Secretaries can spin, so can I. Because this is really a failure disguised as – well, pretty much it wasn’t disguised.

It started out well. Ellyn and Jason had been here the weekend before and I had overestimated their banana requirements, which left us 3 extras. Neither of us is fond of plain old bananas, but we certainly like them baked into fattening sweets. I had just made regular banana bread not long ago, so wanted to do something different this time.nanner Sometimes an idea gets into my head and I just can’t let it go. Remember the Lemon Spice Brownies? I thought about that recipe for a least a month before making the first batch, and it took numerous attempts to get them just right.

The idea in my head this time was to combine chocolate with the bananas.chipsSome baking cocoa in the batter and then maybe a few chocolate chips….

So that’s what I did. Putting together just the right combination of ingredients to yield just what I was looking for – something moist and dense and richly chocolate.loaf Looks mighty tasty doesn’t it?

Well. Not exactly. 3 bananas were too many. Not quite enough flour. And I pulled it out of the oven sooner than I should have. I will spare you the sight of the cut slices – not pretty. Not that we didn’t eat most of it. ‘Cause there were Ghirardelli chocolate chips in there and you don’t waste those babies.

Still, worth fiddling with. Just a little tweek here and there…. I have a couple bananas ripening on the counter as we speak and sometime over the weekend, I will go for it again. That is just the sacrificial kind of blogger I am – anything for you guys!

Over the last year, I have heard from so many of you, expressing support for our family and telling me that you have been praying for her safe return. Some of you sent packages to Lauren and to her fellow soldiers, which were greatly appreciated. And I appreciated your kind words more than you can possibly know.

It was a tough year for all of us.
But now she is back home.
