Lime Meltaways

lime meltawaysThis recipe is a leftover from Christmas.  Oh how I wish that I still had some actual leftovers, because I am pretty sure that these would completely make up for having to hobble about on crutches, watching Larry turn the simplest household chore into a heroic feat, requiring accolades and the waving of olive branches in recognition of his sacrificial emptying of the dishwasher.  [“where does this go?  where does this go?  where does this go?”]  I’m exaggerating, of course.  Mostly.  He is performing his extra duties with pretty good grace, despite being married to a freak who thinks the kitchen table needs to be washed off after every single meal.  I’m such a prima donna, I tell you. 

These cookies, are, in a word, divine.  Dee-vine!  So filled with lime flavor and they truly do melt in your mouth.  This is a Martha Stewart recipe, and when Maria of  Two Peas and Their Pod lime meltaways cookiestweeted back in December that she had made them, after taking a look at this easy recipe, I immediately added them to my holiday baking.  They are hardly limited to Christmas though – I think of them as more of a winter recipe.  The bright fresh flavor of lime is a welcome treat when it is cold and dreary outdoors, and the sugary outsides make me think of fresh crisp snow.  So – winter cookies, not holiday cookies.  These are “slice & bakes”, so you need to plan a little ahead, to give them time to chill before baking.

This is a pretty easy and straightforward dough, so I didn’t do step by step photos.
1 & 1/2 sticks unsalted butter, room temperature [I used salted because it was all I had]
1 cup confectioners’ sugar, divided
Grated zest of 2 limes
2 tablespoons freshly squeezed lime juice
1 tablespoon pure vanilla extract
1 3/4 cups, plus 2 tablespoons all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon salt

In the bowl of an electric mixer, cream butter and 1/3 cup of the sugar.
Add lime zest, lime juice, and vanilla and beat until fluffy.
In another, smaller bowl, whisk together flour, cornstarch, and salt.
Add to butter mixture, and beat on low speed until combined.
Divide dough in half, and place each half on plastic wrap – form into log about 1 & 1/4 inch in diameter, and wrap tightly. Chill at least one hour.
Preheat oven to 350 degrees. Line two heavy baking sheets with parchment paper. Remove plastic wrap from logs and slice about 1/8 inch thick. Place cookies on baking sheets, leaving an inch between each one. Imade mine square rather than round, because I was making these for cookies plates and I wanted a contrast from all of the round cookies I already had.lime meltawaysBake cookies until just getting golden, about 15 minutes.
The recipe says to let the cookies cool a few minutes before dunking in the sugar to coat them but I like to do it right away, because I think the sugar sticks better. You can put the remaining 2/3 cup of confectioners’ sugar in a sealable plastic bag, and add the cookies in to coat them, or as I prefer, put the sugar in a pie plate and gently dunk the cookies in there. After they cool completely, I sift a little more sugar over the tops to give them a more frosty look. You can wait to do that until right before putting them on a plate to serve if you like, and they will look realy nice.lime meltawaysYou can refrigerate the dough for several days before baking, or freeze it, though for freezing, you will want to wrap with a second layer of plastic wrap. Baked cookies will keep about two weeks in a sealed container.
And, as I already mentioned, the lime flavor is very distinct in these and so good. I will definitely be making them again.

A Conversation

Because I am still too much of a wimp to stand on a sprained knee long enough to take photos of anything I am cooking, I give you the following vignette, which took place last month.

We were all up north for Christmas, and all of the wimmin-folk had taken the kids out for a day of last minute shopping and lunch. We had ourselves a fine time, and Ellyn treated us to lunch at Panera, one of the few chain type restaurants I can still abide. On the way out, we refilled our take-out coffee cups, the better to enjoy their brew for a few minutes more. A little while later, I stayed in the van with the kids while Ellyn and Lauren ran into Lowes for a few stockings stuffers for the guys. The kids and I enjoyed listening to music on radio and talking about this and that, whilst I sipped on my delicious coffee.

Then, as Ellyn and Lauren returned to the vehicle –
Me: Oh Shit!*
Ellyn: MOM!
Me: Oops – sorry, I spilled my coffee.
Ellyn: I don’t care – be more careful.
Me: Sorry. I thought in this case, there might be a variance.
Ellyn: [still giving me the stink-eye] Why would there be a variance?
Me: Well. Because I spilled it in your purse.

*Apparently, no Grandchildren were sullied in the course of this event – I think they were too tired to notice, and to my knowledge they haven’t yet spilled their coffee in someone else’s purse, so we can’t be sure of their reaction to such an event.

Imagine

I am one of those weird people who actually like winter and snow. I like the cozy feeling of being in my nice warm house when the weather outside is horrible and daunting. I enjoying getting out there to do a bit of shoveling, fill the bird feeders and maybe take a few photos of scenes that catch my fancy. It’s exhilarating to battle the elements [briefly] and then come in the house for a hot drink, followed by whipping up a batch of hearty soup. But then, I work at home, and don’t have to go out and drive on awful roads every day. I can afford to admire winter a bit more than, say, Larry, who not only drives on awful roads, but also works outdoors in every kind of weather most of the year. He’s glad I am home, whipping up that batch of soup though.

On the other hand, today, I want to imagine it looks like this outside. I can’t go out there anyway, with my knee propped on pillows and ice [oh, how I hate icing – I don’t care it if does keep swelling down, it feels dumb to put ice on one’s body when it is 15 degrees outside] I can imagine whatever I darned well want to. I even remember the day I took this – a sultry, pouting August day that later brought us a spectacular thunderstorm to enjoy with cocktail hour.Have a good one – I am off to refill my icepack!

The Long and Winding Post – New Year’s Edition

windmill, lowville nyHello again! I hope you all had a wonderful time during the holidays. We certainly did. It was so good to all be together again this year. Lauren and Steve were here for a couple weeks, and then we all trekked north for an intensely white Christmas. It was a blast.

I enjoyed a little time off, though I spent some of it working on some plans for this blog for the upcoming year, and trying to get a new project off the ground [more about that soon].

I joined Recipe Girl’s 10in10 project, where a bunch of food bloggers and other folks are working together to get healthier in whatever way they need to.  All are welcome to join, and Twitter makes it easy to keep up – just look for the #10in10 hashtag.  My goals are pretty simple – eat less, move more.  I’ll be blogging some healthier recipes and posting on Saturdays regarding progress and challenges.

Oh yeah – challenges.  Would crutches be a challenge I wonder?  Probably.  I slipped on a wet floor and sprained my knee last Thursday, so crutches and I have become good friends these past few days.  Incidently, I do not recommend falling on a wet floor and spraining one’s knee as a way to celebrate New Years Eve.  And in case you are wondering, this happened before any celebrating had time to begin.  It is finally starting feel a little better, though it looks just awful, with every color in the crayola box rioting about on the back of my leg.  I don’t do well with the majority of painkillers, so I am mostly just whimpering and sucking my thumb.  On the upside, despite a lot of swelling, I have dropped a few pounds over the weekend, so I guess I will call that the start of 10in10.

It remains to be seen if cameras and tripods mingle gracefully with crutches, but I will figure something out so that I can get some new recipes up.  I have a few that I didn’t get around to posting before Christmas, so you’ll get to see those in the next few days.

I am excited about the things coming up in this next year, and crutches to the contrary, I am ready to start working on goals of all kinds. I am looking forward to sharing a lot of it all with you guys. Here is a litle treat for those of you who sent prayers and good wishes for us last Christmas, when Lauren was in Iraq – I took this a few days ago, on the gloomy, frigid morning when they were leaving to head back to Georgia.
