These are literally all my favorite ingredients. I just baked left-over Brussels sprouts and butternut squash into quinoa topped with Parmesan, but this looks better than what I did. Yum!

This warm quinoa salad sounds divine – I think the lemon vinaigrette sounds perfect with the beautiful roasted vegetable salad.

I love quinoa, but I go in spurts with it. This looks like such a delicious way to eat it!
I know what you mean Aggie – I am looking for more ways to use it. I am not sure I would like it well as I do rice in dishes with meat in them.

This looks wonderful!! I’ve recently begun cooking quinoa and am trying to find other recipes. My kids would probably like this since they love roasted veggies.
