One of Larry’s absolute favorite sides. I adapted this from a recipe my Mom used to make called Quik-nik. [please if you had this growning up – leave me a comment because other than my family, I have never run across anyone who has had it] Quik consisted of Spam sauteed with peaches and served with a spicy potato salad somewhat like this one. I have fiddled with this recipe a lot over the years but this is pretty much the final permutation I think. This recipe will serve 4.
3 lbs red or other waxy potatoes
Peel and cube. Put in saucepan with water just enough to barely cover to which you have added 1/2 teaspoon salt. Bring to a boil over medium heat and simmer until done but not at all mushy.
Meanwhile combine:
1/2 cup lowfat or regular mayonaise
1/2 cup lowfat or regular sour cream
1/4 cup fat reduced buttermilk
2 tablespoons prepared mustard – a good dijon or full grain type is best, but the yellow stuff would work too.
1-2 teaspoons dry mustard – more if you like things spicier.
1/3 cup diced onion or sliced scallions
1/2 cup chopped celery
1 tablespoon chopped parsely
salt and pepper to taste
Mix all ingredients for the dressing. Drain potatoes when done and immediately add to dressing. Stir gently and serve immediately. Leftovers should of course be stored in the fridge and should be eaten cold – reheating will cause the dressing to separate. We love this with pork chops that have been sauteed or grilled using a very spicy rub, followed by a last minute basting with a sweet-smoky bbq sauce. When I am feeling too lazy for homemade, I like Cattlemen’s Classic BBQ Sauce.
That’s totally low-carb and fat free right? Looks fab!
You are still alone in your Quik-nik ways. I’ve never heard of it, or of cooking Spam that way. Ick! Spam!

You lost me at Spam! lol
You’ll have to go over to my blog and read my Thanksgiving story concerning Spam if you haven’t already done so.
Have a great day!
I haven’t heard of Quick-nik, but your potato salad receipe sounds yummy!
Looks yummy! Thanks for visiting my blog… I’m really liking yours, too! Clever and full of variety.
:)
MMM! Now I don’t have to wait for summer to have potato salad!!!
You are SO my hero!
Aw-w-w! A recipe again? Becasue your blog is my daily lunch time entertainment, I go ahead and read it ….. there’s nothing funny there. It just makes me wish I was eating what is in the lovely picture along with what you usuallly describe that you serve with the posted recipe, rather than what I am eating at the moment. I have tried to print these off and pass them out to the appropriate chefs, hoping it would translate into a chance to actualy sample the creation ….. but to no avail. (I’m sorry, I’m being very selfish.)
Maybe WeeZee will have something funny today. ; )
Yours Truly, CM
Tuesdays are recipe day CM – maybe you should bring some cooking supplies to work with you and then you could cook along? I promise some hugely funny stuff later in the week. I hope.
I can’t believe no one else has ever heard of Quick-nik. I know it is strange and wrong to like spam, but I still do. It has to be fried crispy on the outside though.
Do you know what state eats the most Spam? c’mon – guess!
Sister hb – yes this is completely diet-friendly, no matter what eating plan you are religiously following.
Ness- I will be right there!
This looks good enough to eat! NOW!! (Hungry girl, I am). But Spam? I’m sorry…it’s cerebral…I cannot knowingly eat anything with it in it.
This is a nice new take on one of my favorite sides EVAH! I’ll be curious to try it sometime.
Hey I have had quiknik, oh wait that’s right, you’re my sister. :-)
MMMMM so good. I am going to make this soon.
sorry CM no blogging yet today, I had to work! Can you believe it? I better finish up.
This is so yummy. It isn’t the same without spam and peaches though.
The answer to the spam trivia is Hawaii. I watched that episode of Unwrapped too.
The potato salad looks great! Spam, on the other hand, not so much!!! :)
Looks great. I’ll have to try it.
