found these when searching for the perfect coconut mini-muffin (had a craving) – they’re delicious! I added a little coconut extract with the vanilla, and they turned out delicious… great recipe – glad to have found your site!

These look excellent! I am trying to incorporate more coconut of all kinds into dishes for my Dad who has Alzheimer’s. I’ve heard coconut can make a huge difference in his cognition so I’m willing to try any and everything. You note in the directions to add 1% or skim milk to the cupcake batter. What do you think about adding coconut milk? I am not concerned about calories, and even if I was, he has lost a lot of weight so that does not worry me. I would like to boost the coconut content and wondered what your thoughts were or if you might have tried it already in testing your recipe. Thanks for your help!
