Oh golly. Golly golly golly. You can hear these babies screaming your name from clear in the other room. Don’t say I didn’t warn you ahead of time – they are evily delicious. Still, you should make them because they are worth every minute of extra time you have to spend on the treadmill. And – they have oatmeal which not only adds a nice texture, but is also good for lowering your cholesterol. See how I look after your health? We better get started!
Preheat the oven to 350º, and grease a 24 count mini-muffin tin, or line cups with paper liners
In a medium bowl, combine:
1 & 1/2 cups all purpose unbleached white flour
1/2 cup slow cooking oats
1 cup sweetened, flaked coconut
3/4 cup white sugar
1/2 teaspoon salt
1 & 1/2 teaspoon baking powder
1/2 teaspoon freshly grated nutmeg
In a large measuring cup, combine
2 beaten eggs
4 tablespoons melted butter
1 cup 1% or skim milk
1 teaspoon vanilla
and fold into dry ingredients, until just combined
Divide evenly in the muffin tin
Bake for 12 to 15 minutes, or until toothpick comes out with just a few moist crumbs. While the muffins are baking, make the glaze.
Combine
1 & 1/2 cups confectionary sugar
about 4 tablespoons fresh lime juice
1 tablespoon freshly grated lime zest
You can add a little more lime juice if the glaze is too thick – you don’t want it too thick, because you are going to dip the muffin tops in there.
When the muffins test done, remove from the tin immediately and cool for about 15 minutes.
Then dip each muffin in the glaze and allow to dry on the cooling rack
OR
Put them on a pretty plate and listen to them call your name
