So instead of Pumpkin Bread, we have
Squash Bread
3 cups all purpose flour
1 cup whole wheat flour
1 cup regular oats
2 cups sugar
1 cup packed brown sugar
3 teaspoons baking soda
1 1/2 teaspoons baking powder
2 teaspoons salt
3 teaspoons cinnamon
1 1/2 teaspoons nutmeg
1 tablespoon freshly grated ginger
Mix all of that together in a big bowl
Throw in on top:
3 generous cups pureed squash [you can use pumpkin if that is what you’ve got]
2 eggs
2 egg whites
1 3/4 cups lowfat buttermilk
1/4 cup oil or melted butter
Mix it all up until blended and decant into 3 greased large bread pans or 9 little ones.
Bake at 350 for 45 min to 1 hour – until toothpick comes out clean. Remove from pans and
cool on wire rack.
This is fairly low fat stuff, which is my intention. Now that I am doing WW instead of Atkins, I can BAKE which I haven’t been able to do for the last 5 years. I still have to watch my carbs, but a slice or two of this is going to be just fine. And wow, is it good!
