Pumpkin Gingerbread Muffins

Okay – I will come clean. I had a lot of pumpkin a couple falls ago when I first came up with this recipe, but now I have a lot of squash, so that is what I used to make these today. Pumpkin and squash are very nearly interchangeable as far as I am concerned, and they are equally delicious in these.

This is what you need. [I will come back later to try and figure out what stupid thing Blogger is doing with my images the past few days that makes them 400pixels wide instead of 500 like they are supposed to be. Makes me glad that I am moving to Word Press and my own domain soon.]
1 cup pureed pumpkin or winter squash
3/4 cup dark molasses
1/4 cup vegetable oil
1 egg
freshly grated zest from 1/2 lemon
about 1 inch piece of fresh ginger, grated [1 teaspoon ground]
1 teaspoon freshly grated nutmeg [1/2 teaspoon from the can]
1 teaspoon cinnamon
Mix all of that together until it is thoroughly combined and then mix in
2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
Not too much – just until it comes together

Scoop batter evenly into 12 lined cups in a heavy muffin tin.Bake around 20 to 25 minutes in a 350 degree oven. They tend to be a little damp, so don’t take them out too soon. Cool on a rackLook pretty good don’t they?Even better!

    I was FINE until that last photo… and melting butter OH DEAR DROOLLLLLLLLLLLLLLLLLLLL seriously the only thing that could make me drool more would be to smell those bad boys cooking or … like that last photo! MOre drool
