Fresh Blueberry Coffee Cake

We live next door to my in-laws. Have I ever mentioned this before? And have I mentioned that next to the barnyard, my mother in law has a very impressive grove of blueberry bushes? And that in a nice rainy summer like this one, those blueberry bushes are positively packed with berries? It is all true. My mother in law is a very generous person. Just look at these little lovelies!berriesThis is my adaptation of a standard sour cream coffee cake and a very quick and easy way to use either fresh or frozen blueberries. Here is how I like to do it.

Grease an 8 or 9 inch baking dish and preheat the oven to 350 degrees.
Cream together:
1/3 cup softened butter
1/2 cup brown sugar
Then beat in
1 egg
1 teaspoon vanilla

You can premix the dry ingredients, but I don’t – I just dump it all in there.
1 cup all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon grated lemon peel

Empty in
1/2 cup sour cream

Mix all of this together until smooth.

Put about 2/3 of the batter in the bottom of the greased baking dish and spread evenly.preberryThen, evenly distribute a generous cup of blueberries. [if you use frozen berries, let them sit at room tempurature for an hour or so to soften a bit]berriedTop with remaning batter, again spreading it evenly over the berries.layeredThen combine:
1/3 cup softened butter
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup all purpose flour
When blended, sprinkle over the top of the cake.toppedBake at 350 for about 45 to 55 minutes, until cake tests done and the top is all brown and yummy looking.bakedServe with whipped cream, ice cream or just pick up a hunk in your hand and go to town.finalEasy and so delicious – what could be better than that?

Fresh Blueberry Coffee Cake
Prehaet oven to 350 degrees and grease a 8 or 9 inch square baking dish.
1/3 cup softened butter
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon grated lemon peel
1/2 cup sour cream
1 heaping cup of blueberries
Topping
1/3 cup softened butter
1/2 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup all purpose flour

Cream together butter and first amount of sugar. Beat in egg and vanilla. Add dry ingredients and sour cream and combine until batter is smooth. Spread 2/3 of batter in bottom of baking dish, top with berries and then the rest of the batter. Combine topping ingredients and spread over top of cake. Bake for 45-55 minutes until cake is done and topping is browned.

Oh Good Grief!

So, I am sitting on the porch last night, enjoying a nice glass of Pico shiraz and watching the shadows stretch out down the yard, when I realize someone is staring at me.Me: Can I help you with something?
Riley: I was looking on your blog while you guys were out earlier…
Me: Oh, I can’t wait to hear this! Riley: Well you still owe me for that post about a Happy Life that didn’t mention me.
Me: I will get to it – it wasn’t that long ago.
Riley: It was 7 months ago!
Me: No way – that was just a week or two ago.
Riley: It was June 26th. That was 7 months ago.
Me: That was one month ago!
Riley: 7 DOG months!
Me: For crying out loud…
Riley: A loooooong time, no matter how you count it.Me: Hmmmmm. Sorry – you know how time just flies right by. I will get to it.
Riley: Whatever.Me: Maybe there is a way I could make it up to you? You can usually think of something…
Riley: Now that you mention it, those Triscuits you’re eating look pretty good.Me: That is all it will take to appease you? A Triscuit?
Riley: Two Triscuits. And don’t leave the hummus off mine this time!Me: That is what this is all about? No hummus on your triscuits?
Riley: I really really like hummus.
Me: Hey, if it will get you off my back, two Triscuits with hummus coming right up!
Riley: I still want to be on your blog though.Me: I have no doubt you will show up there very soon!

Saturday Morning in the Daylilies

It’s actually not that easy to get good shots of daylilies. When the morning light is still good, they aren’t all fully open yet. By the time they are fully open, the light is often too bright. And waiting for the good evening light isn’t a good idea either because by then a lot of the blooms have bleached out some and they are all covered with pollen and bug spots. These shots were all taken this morning around 7:45AM. With the exception of cropping and a very slight sharpening, they are straight out of the camera.

A few years ago, I ordered a group of unnamed seedlings from a hybridizer who was selling his excess plants on eBay. This yellow is one of my favorites from that group.I had wanted this one – Tom Wise – ever since I first saw it online. Last year, right before she had Anna, Ellyn and I visited a daylily selling garden down near where they lived in Virginia and I picked this up along with an obscene number of others.For a person who detests spiders, my attraction to spider form daylilies is not something I can explain. This is Spider Miracle.This is supposed to be Tuscawilla Tigress, but it doesn’t really look like the photos I have seen of this cultivar. It is pretty either way.Hot Town – I go this from a couple who live not far from me. Their obsession with daylilies has necessitated the selling off of their excess fans. Visting them is like stepping into daylily heaven – they walk around their gardens with you, naming every single plant from memory and scribbling down the names of the ones you want. At the end, they present you with a total that is about a third to a half of what you would pay anywhere else and in mid-August they call you to come and pick up your prizes. I have a nearly overwhelming urge to kiss these two people, but I restrain myself because I want to be able to go back next year.This is Monster which I got from the same folks. A lot of people are not crazy about the form of this one – it grows too open and the color is blotchy. The blotchy color is one of the reasons I love it – every bloom has different water-color like patterns.Sammy Russell – an older cultivar. It multiplies rather rapidly which means I have lots of them. The bees seem to really like it – there are always crowds of them working the flowers.Somebrero Way – one of the first daylilies I ever bought. It has a very long bloom time and in a good year even gives me a second flush of flowers in later September.
