Apple Cheese Crisp

So, apples right? I love apples and I especially like baking with them. Not that I don’t appreciate a nice naked, low fat apple. I do. But with just a few, slightly more calorie dense additions, you can really improve not just the apple, but perhaps your entire outlook on life.

Larry loves apple pie and though I am working on it, I am not fond of making pie crusts. I have mentioned my grandmother’s ability to seemingly draw forth a perfect pie crust from thin air, but I am no where near as skilled as she. I like apple crisp because it is easier than pie. [ha! get it? easier than pie!] The addition of the cheesecake layer is pure inspiration in my book. You can let me know what you think.

Preheat the oven to 350 degrees and grease a 10 inch pie plate liberally with butter.apples500x287Peel and slice 3 large apples. You want enough apples to loosely fill the pie plate about 2/3. Combine the apple slices with a pinch of salt, 1/4 cup sugar, 1/2 teaspoon ground ginger and about 3/4 teaspoon cinnamon. apples_spices500x278Mix well and spread evenly in the pie plate, leaving plenty of gaps for the cheesecake filling.mixed500x235Beat together 8 ounces of room temperature cream cheese or neufchâtel, 2 eggs, 1/4 cup brown sugar, 1 teaspoon vanilla and a pinch of salt. Beat until very creamy and pour over the apples, letting it settle into the empty spaces and spreading evenly over the top.add_cheese500x247Finally, combine 1/2 cup each all purpose flour and oatmeal, 1/3 cup brown sugar, 1/3 cup coarsely chopped walnuts, 5 tablespoons softened butter, 1/2 teaspoon cinnamon and pinch of salt. I use a pastry cutter for this but you can use a fork or just your hands. Spread this mixture evenly over the top.topping500x237Bake at 350 for about 40 minutes – until the apples are nicely soft, the top is browned and there is bubbly sauce from the apples around the edge.baked500x237And then – you cut a nice big slice and eat it. I’m not lyin’….um lion

You may not realize it, but we have lions here in Upstate NY. No – really, we do. See?From my years of communicating with Riley and various other wildlife, I was able to understand the thoughts of these lions as we observed them. This one is thinking about what he is going to eat next.And this lovely lady? She is a huge Ray Charles fan and fancies that if she’d just had the chance, she could have been a backup singer for him. She’s pretty good too – listen:Baaaaay-beeeeeee!Oh no – there she goes again.Baaaay-beeeeeee!

Sunday

We pray Psalm 91 for Lauren every day and today I felt like putting it out here again – this time in the New Living Translation. Have a blessed Sunday.

Psalm 91
1 Those who live in the shelter of the Most
High will find rest in the shadow of the Almighty.
2 This I declare about the Lord:
He alone is my refuge, my place of safety;
he is my God, and I trust him.
3 For he will rescue you from every trap
and protect you from deadly disease.
4 He will cover you with his feathers.
He will shelter you with his wings.
His faithful promises are your armor and

nor the arrow that flies in the day.

Pumpkin Gingerbread Muffins

Okay – I will come clean. I had a lot of pumpkin a couple falls ago when I first came up with this recipe, but now I have a lot of squash, so that is what I used to make these today. Pumpkin and squash are very nearly interchangeable as far as I am concerned, and they are equally delicious in these.

This is what you need. [I will come back later to try and figure out what stupid thing Blogger is doing with my images the past few days that makes them 400pixels wide instead of 500 like they are supposed to be. Makes me glad that I am moving to Word Press and my own domain soon.]
1 cup pureed pumpkin or winter squash
3/4 cup dark molasses
1/4 cup vegetable oil
1 egg
freshly grated zest from 1/2 lemon
about 1 inch piece of fresh ginger, grated [1 teaspoon ground]
1 teaspoon freshly grated nutmeg [1/2 teaspoon from the can]
1 teaspoon cinnamon
Mix all of that together until it is thoroughly combined and then mix in
2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
Not too much – just until it comes together

Scoop batter evenly into 12 lined cups in a heavy muffin tin.Bake around 20 to 25 minutes in a 350 degree oven. They tend to be a little damp, so don’t take them out too soon. Cool on a rackLook pretty good don’t they?Even better!

Kinda Glum Around Here

This is Larry and I this morning when we looked outside and realized that for once, the weather forecast was right and it is going to rain all-freakin-day. Okay – not really. This is Catherine and Hopkin. They were my Dad’s Dad’s Mother’s relatives. I only know that because they had the same last name as she did. I will email my aunt and my Dad and ask them to tell me more about who they were. There seemed to have been some kind of cultural stricture in place back then. I have a number of photos of family from this era and without exception, everyone is looking at the camera with this same mixture of defiance and resignation. It was perhaps a sign of a lack of moral fiber to smile when having one’s photograph taken. I actually feel much the same way when having my picture taken now, so I understand how they felt.

The sun will not shine and it is too wet to play, so I will stay in the house all this cold cold wet day.* I have some fun that is funny though – some stuff to bake, a big pot of spaghetti sauce to make and some photos to edit for next week and we are having company for dinner later on so I guess I ought to clean up a little. I will be back in a bit with a bonus recipe. In the meantime -enjoy your Saturday more than those folks up top seem capable of.
