Have I ever mentioned this before? And have I mentioned that next to the barnyard, my mother in law has a very impressive grove of blueberry bushes? And that in a nice rainy summer like this one, those blueberry bushes are positively packed with berries? It is all true. My mother in law is a very generous person. Just look at these little lovelies!<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2677\" title=\"berries\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berries.jpg\" alt=\"berries\" width=\"500\" height=\"296\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berries.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berries-300x177.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>This is my adaptation of a standard sour cream coffee cake and a very quick and easy way to use either fresh or frozen blueberries. Here is how I like to do it.<\/p>\n<p>Grease an 8 or 9 inch baking dish and preheat the oven to 350 degrees.<br \/>\nCream together:<br \/>\n1\/3 cup softened butter<br \/>\n1\/2 cup brown sugar<br \/>\nThen beat in<br \/>\n1 egg<br \/>\n1 teaspoon vanilla<\/p>\n<p>You can premix the dry ingredients, but I don&#8217;t &#8211; I just dump it all in there.<br \/>\n1 cup all purpose flour<br \/>\n1\/2 teaspoon salt<br \/>\n1 teaspoon baking powder<br \/>\n1 tablespoon grated lemon peel<\/p>\n<p>Empty in<br \/>\n1\/2 cup sour cream<\/p>\n<p>Mix all of this together until smooth.<\/p>\n<p>Put about 2\/3 of the batter in the bottom of the greased baking dish and spread evenly.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2678\" title=\"preberry\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/preberry.jpg\" alt=\"preberry\" width=\"500\" height=\"308\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/preberry.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/preberry-300x184.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Then, evenly distribute a generous cup of blueberries. [if you use frozen berries, let them sit at room tempurature for an hour or so to soften a bit]<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2679\" title=\"berried\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berried.jpg\" alt=\"berried\" width=\"500\" height=\"319\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berried.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/berried-300x191.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Top with remaning batter, again spreading it evenly over the berries.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2680\" title=\"layered\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/layered.jpg\" alt=\"layered\" width=\"500\" height=\"308\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/layered.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/layered-300x184.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Then combine:<br \/>\n1\/3 cup softened butter<br \/>\n1\/2 teaspoon cinnamon<br \/>\n1\/2 cup brown sugar<br \/>\n1\/2 cup all purpose flour<br \/>\nWhen blended, sprinkle over the top of the cake.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2682\" title=\"topped\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/topped.jpg\" alt=\"topped\" width=\"500\" height=\"308\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/topped.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/topped-300x184.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Bake at 350 for about 45 to 55 minutes, until cake tests done and the top is all brown and yummy looking.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2683\" title=\"baked\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/baked.jpg\" alt=\"baked\" width=\"500\" height=\"308\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/baked.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/baked-300x184.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Serve with whipped cream, ice cream or just pick up a hunk in your hand and go to town.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2684\" title=\"final\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/final.jpg\" alt=\"final\" width=\"500\" height=\"308\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/final.jpg 500w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/07\/final-300x184.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Easy and so delicious &#8211; what could be better than that?<\/p>\n<p>Fresh Blueberry Coffee Cake<br \/>\nPrehaet oven to 350 degrees and grease a 8 or 9 inch square baking dish.<br \/>\n1\/3 cup softened butter<br \/>\n1\/2 cup brown sugar<br \/>\n1 egg<br \/>\n1 teaspoon vanilla<br \/>\n1 cup all purpose flour<br \/>\n1\/2 teaspoon salt<br \/>\n1 teaspoon baking powder<br \/>\n1 tablespoon grated lemon peel<br \/>\n1\/2 cup sour cream<br \/>\n1 heaping cup of blueberries<br \/>\nTopping<br \/>\n1\/3 cup softened butter<br \/>\n1\/2 teaspoon cinnamon<br \/>\n1\/2 cup brown sugar<br \/>\n1\/2 cup all purpose flour<\/p>\n<p>Cream together butter and first amount of sugar. Beat in egg and vanilla. Add dry ingredients and sour cream and combine until batter is smooth. Spread 2\/3 of batter in bottom of baking dish, top with berries and then the rest of the batter. Combine topping ingredients and spread over top of cake.
