Soup can be a quick meal, or one that sits and simmers for a while &#8211; either way, it is usually pretty low maintenance, so it&#8217;s perfect for a week night meal for us. This is not super quick, but once you get the chopping done, you are pretty much home free, with the exception of a little zapping with immersion blender at the end. The flavor of the celery really sparks up the cauliflower and the wine deepens the flavor of the cheese &#8211; great combos all around.<br \/>\nTo start, chop<br \/>\n3 ribs of celery<br \/>\n1 medium onion<br \/>\nYou are going sweat the veggies for a bit, which means you keep the heat down until they are translucent. I used chicken stock left after roasting a chicken, so I had some chicken fat from that, which I used for the sweat, but if you prefer, you can use a couple tablespoons of olive oil. The chicken fat is richer though.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1209\" title=\"15\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/15.jpg\" alt=\"15\" width=\"600\" height=\"376\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/15.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/15-300x188.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Pour 1 cup of dry white wine into the pot and simmer for a few minutes, and then add 2 cups chicken stock, plus a teaspoon of kosher salt and a few grinds of pepper.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1211\" title=\"23\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/23.jpg\" alt=\"23\" width=\"600\" height=\"195\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/23.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/23-300x97.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add 3 or 4 medium garlic cloves, chopped and 2 teaspoons dried thyme [1 tablespoon fresh]<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1212\" title=\"33\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/33.jpg\" alt=\"33\" width=\"600\" height=\"284\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/33.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/33-300x142.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add 1 medium head of cauliflower, chopped<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1213\" title=\"43\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/43.jpg\" alt=\"43\" width=\"600\" height=\"171\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/43.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/43-300x85.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Simmer until the cauliflower is very soft &#8211; about 40 minutes.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1214\" title=\"54\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/54.jpg\" alt=\"54\" width=\"600\" height=\"338\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/54.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/54-300x169.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add 2 cups milk &#8211; 1% or above, and bring back up to a simmer.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1216\" title=\"63\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/63.jpg\" alt=\"63\" width=\"600\" height=\"338\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/63.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/63-300x169.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Use an immersion blender and zap it all together until it is smooth. You can leave it chunky if that is what you prefer.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1218\" title=\"73\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/73.jpg\" alt=\"73\" width=\"600\" height=\"338\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/73.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/73-300x169.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>This is 4 ounces of extra sharp cheddar and 2 ounces of feta. You need about 6 ounces of cheese, but you can use whatever you like the best. I use what I have on hand and what I think will make a nice combo &#8211; try cheddar and pepper-jack sometime!<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1219\" title=\"cheese\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/cheese.jpg\" alt=\"cheese\" width=\"600\" height=\"338\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/cheese.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/cheese-300x169.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Whatever you use, keep the heat very low and stir constantly for a couple minutes to melt cheese. Remove from heat, cover and allow to sit for about 5 minutes more. If you use feta, you might want to run through it another time with the immersion blender because feta is not a smooth textured cheese, even when melted &#8211; not a big deal to skip that though.\u00a0 Taste and add salt if needed.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1220\" title=\"finished_pan\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/finished_pan.jpg\" alt=\"finished_pan\" width=\"600\" height=\"338\" srcset=\"https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/finished_pan.jpg 600w, https:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/03\/finished_pan-300x169.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Just before serving, stir in a couple tablespoons fresh parsely, roughly chopped.
