Roast Potatoes and Veggies

Here it is the middle of the month already, and that makes it time for our favorite girl to show up – the Potato Ho! potato-hoe-down-logo_medCathy and Krysta, of Noble Pig and Evil Chef Mom began this project last year an it continues to provide us all with tons of great ideas for using spuds. Anyone is welcome to join in and this month’s hostess is Christie of Fig & Cherry. Now lets get to the goods!

In keeping with my newly-found efforts to be reasonable in both price and calories, I threw together a little something you might like to try. It also fits nicely with my overall cooking philosophy – that fresh, simple ingredients make the best meals. And it truly can’t get much more simple than this.

Ingredients include
red skin potatoes, scrubbed and cubed
onion, peeled and cut into a large dice
fresh broccoli, separated into florets
fresh cauliflower, separated into florets
garlic, minced
fresh rosemary, leaves stripped from stem [the stuff in the little jar will work in a pinch]
kosher salt
cracked pepper
olive oil
butter [optional]

See – no amounts are given? That is because you can adjust this for your own personal taste and dietary needs. You can use fewer potatoes if you are watching your carbs, or use lots of cauliflower because you prefer it to broccoli. You can leave off the butter at the end. Using red waxy potatoes means using less oil because they won’t absorb as much as starchier potatoes would. And it can all be adjusted for the number of people you need to serve. If you are making a lot though, you may want to use two sheet pans, because if the ingredients are crowded, they will not cook as well. They can be touching at the start because they will shrink up a bit, but there should be room for just a single layer with no piling up of the veggies.

Line a sheet pan with parchment paper. Scatter the potatoes and onions around, sprinkle with salt and pepper and drizzle with olive oil. It won’t take a lot of oil – you don’t need to coat everything. I probably used 3 tablespoons for the whole pan. Place in oven set at 400º for 20 minutes, stirring after 10 minutes.
raw_potatoesAdd the broccoli, cauliflower, garlic and rosemary and stir around to even distribute everything. If it is looking terribly dry, you can drizzle over another tablespoon of oil. Return to oven and continue roasting another 20 minutes or so until potatoes are done and everything has a little color on it.broc_cau_inAt this point, you can dot it with a few small cubes of butter and return to the oven for another 5 minutes. Do an extra 10 minutes on the elliptical to make up for it.done_sheet500Now doesn’t that look yummy? Less that an hour from start to finish and most of that time it was in the oven, so you could be doing other things. Give it a try!bowl500

TGIF – Wherein we speak of many things

It has been an odd couple weeks around here. Larry is off for a bit, not unusual for us since carpentry tends to dry up in the colder months. Then last week, we were notified that my company lost the contract with the client for whom I was working. Not to worry – I have interest already from two companies I have worked with in the past, so I don’t think I will be out of work for long. Still, it is very weird for both of us to be at loose ends at the same time. It discombobulates my equilibrium you know?

Even Riley can’t figure it out. He goes and stands in his crate where he spends his time while I am working, waiting for his cookies. He comes out to look for me and scampers back to his crate at the time when I normally start working, as if he can jump-start me into giving him his treat, and getting my butt to working so that I can afford to buy him more. He has a very firm grasp of economic theory, that dog.

And I am working to get my blog moved to my own domain and deciding if I want to move to WordPress instead of Blogger. I hate making decisions like this. There are pros and cons for both and I still haven’t decided which way to jump. [input from other bloggers appreciated]

Front Door/ Back Door meme

January 15th means that it is time for the Front Door/Back Door Meme. There isn’t a whole lot of difference between this morning and a month ago – it is cold and snowy and pretty out. And a little lighter which is a good thing – our days are getting longer again already. It was about -5º when I took these – colder than a well-digger’s butt as my Grandmother says. I guess their butts get cold because they are wet? It is one of those sayings that you hear all your life and you know what the person means when they say it, but you don’t think much about what it really means. Well digging is done with a big truck and drill thing now of course, so I would imagine if the well digger’s butts get cold, they could sit in inside the truck with the heat on. But I digress. Anyway – it is really cold here.

Out the front door:front_01_15_09And out the back:back_01_15_09Really frigid mornings are often very beautiful – the cold does something special to the air quality, giving everything a magical glow.

Could not be easier, right? I don’t care where you live, what you see when you step out your door is different than what the rest of us see outside ours and that is what makes it interesting.
