So I tweaked my usual corn bread around a little and came up with these muffins. Corn, jalapenos and lime just go togther as far as I&#8217;m concerned.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2282\" title=\"lime\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/lime.jpg\" alt=\"lime\" width=\"500\" height=\"255\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/lime.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/lime-300x153.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Preheat your oven to 400 degrees and grease a muffin tin or use liners. I like to do these right in the tin because they get a nice crunch on the outside that way. Then, in a medium mixing bowl, whisk together:<br \/>\n1 &amp; 1\/2 cups cornmeal &#8211; stoneground preferably, the regular stuff works fine too<br \/>\n3\/4 cup all purpose flour<br \/>\n1 tablespoon baking powder<br \/>\n1 teasoon salt<br \/>\n1 teaspoon sugar<br \/>\nthe grated zest from 1\/2 of a medium lime<br \/>\nIn another bowl, or a 2 cup measuring cup, which is what I like to use, mix together:<br \/>\n1 cup lowfat buttermilk [reg milk will work fine if that is what you have]<br \/>\n1 egg<br \/>\n3 tablespoons vegetable oil<br \/>\njuice from 1\/2 lime<br \/>\n1 finely minced jalapeno pepper [this is one of my frozen ones]<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2283\" title=\"wets\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/wets.jpg\" alt=\"wets\" width=\"500\" height=\"302\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/wets.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/wets-300x181.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Mix the wet ingredients into the dry, and just like you learned in 7th grade Home Ec, stir just until all the ingredients are combined, making sure to get any dry bits off the bottom mixed in.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2284\" title=\"mix1\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix1.jpg\" alt=\"mix1\" width=\"500\" height=\"295\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix1.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix1-300x177.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>I like a rubber spatula for this because you can fold the ingredients efficiently without mixing too much. Miss Blieler would be disappointed if you mix your muffins too much because they will tough and chewy instead of light and crumbly.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2286\" title=\"mix2\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix2.jpg\" alt=\"mix2\" width=\"500\" height=\"310\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix2.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/mix2-300x186.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Spoon carefully into the greased tin. Again try not to stir the batter around too much &#8211; gentle handling pays off when it comes to muffins.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2287\" title=\"tin\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/tin.jpg\" alt=\"tin\" width=\"500\" height=\"220\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/tin.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/tin-300x132.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Bake about 14 minutes and then cool briefly on a wire rack.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2288\" title=\"cool\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/cool.jpg\" alt=\"cool\" width=\"500\" height=\"284\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/cool.jpg 500w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2008\/11\/cool-300x170.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/>Serve with butter and preferably with some nice chili, like the <a href=\"http:\/\/dlynz.blogspot.com\/2008\/11\/turkey-black-bean-chili.html\">Turkey Black Bean Chili<\/a> right up above. Try not to eat them all at once, but if you do, I am sure everyone will understand.
