Larry nor I are fond of bananas, so I usually only buy them for the kids. We do like baked stuff with bananas though. Why don&#8217;t I normally buy bananas just to bake with? I have no idea &#8211; guess I just don&#8217;t think of it. Anyway, after the last visit, I had to figure out a way to use up the last 2 in the bunch. I have a couple recipes I like, but I have already blogged those, [the links are at the bottom of the post], so it was time to think of something new.<\/p>\n<p>I like quick breads with oatmeal in them, and I had a pound of walnuts waiting to be used up, so I thought it would make a nice combination.  Toasting the walnuts is well worth the extra trouble, because the flavor is much better and they will stay crunchy. You don&#8217;t want powder here &#8211; just a bit of a coarse breakdown. Preheat the oven to 350 degrees, and grease an 8&#215;5 bread pan.<\/p>\n<p>Mix together<br \/>\nthe oats from above<br \/>\n1 cup all purpose flour<br \/>\n1\/2 cup granulated sugar<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 teaspoon baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n1 teaspoon ground cinnamon<br \/>\n1\/2 cup lightly toasted walnuts, roughly chopped<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4424\" title=\"banana bread dry ingredients\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob2.jpg\" alt=\"banana bread dry ingredients\" width=\"600\" height=\"393\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob2.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob2-150x98.jpg 150w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob2-300x196.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>In a 1 cup measuring cup, mix together<br \/>\n1\/2 cup yogurt<br \/>\n1 egg<br \/>\n2 tablespoons vegetable oil<br \/>\n2 tablespoons honey<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4423\" title=\"honey and eggs\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob3.jpg\" alt=\"honey and eggs\" width=\"600\" height=\"393\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob3.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob3-150x98.jpg 150w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob3-300x196.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Chop &#8211; don&#8217;t mash &#8211; two ripe bananas, and add to the bowl, Pour the other wet ingredients over <img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4422\" title=\"bob4\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob4.jpg\" alt=\"\" width=\"600\" height=\"393\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob4.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob4-150x98.jpg 150w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2010\/05\/bob4-300x196.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Mix gently, until combined. If you have doubts, let it bake another couple minutes, because you definitely don&#8217;t want this to be underdone.
