It is not too late for it to still be seasonal though &#8211; all of these vegetables are still available fresh here. At other times of year, you can substitute whatever is fresh at the moment. And even in the dead of winter there is always the supermarket. I mean &#8211; we eat what we grow plus what others around us grow for a large part of the year, but we don&#8217;t want to get scurvy, so in the winter our fresh veggies come from places a lot further away. Beans and corn don&#8217;t grow very well in snow after all. My point is &#8211; while the vegetables I chose here are a great combination, use what you have and what you like.\u00a0 We better get started if we want this for dinner tonight.<\/p>\n<p>In a heavy stock pot, brown<br \/>\n4 strips bacon, diced<br \/>\nRemove bacon and reserve. To the bacon drippings in the pan, add<br \/>\n\u00bd cup chopped celery<br \/>\nPinch of salt<br \/>\n5 scallions, divided<br \/>\nSaute until the celery begins to get translucent &#8211; about 4 minutes.<br \/>\nAdd, and saute another minute<br \/>\n1 large clove garlic, minced<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3211\" title=\"1gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/1gcc.jpg\" alt=\"1gcc\" width=\"600\" height=\"359\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/1gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/1gcc-300x179.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add<br \/>\n1 cup corn kernels<br \/>\n1 &amp; \u00bd cups sliced carrots<br \/>\n1 cup green beans, cut in \u00bd inch pieces<br \/>\n12 ounces new red potatoes, cut in 1 inch pieces<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3210\" title=\"2gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/2gcc.jpg\" alt=\"2gcc\" width=\"600\" height=\"402\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/2gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/2gcc-300x201.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Saute over medium heat for 6 or 7 minutes<br \/>\nIncrease heat to high and add<br \/>\n\u00bd cup dry white wine<br \/>\nCook and stir gently until wine reduces by about half<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3208\" title=\"3gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/3gcc.jpg\" alt=\"3gcc\" width=\"600\" height=\"402\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/3gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/3gcc-300x201.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add<br \/>\n4 cups strong chicken stock<br \/>\n3-4 sprigs fresh thyme<br \/>\nSimmer on low heat for about 20 minutes, until carrots and potatoes are just tender. Remove thyme stems.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3207\" title=\"4gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/4gcc.jpg\" alt=\"4gcc\" width=\"600\" height=\"433\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/4gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/4gcc-300x216.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Stir in<br \/>\n\u00bd lb skinless, boneless chicken, cut in 1 inch cubes<br \/>\n4 or 5 sprigs flat leaf parsley, roughly chopped<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3206\" title=\"5gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/5gcc.jpg\" alt=\"5gcc\" width=\"600\" height=\"411\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/5gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/5gcc-300x205.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Bring back up to a simmer for a couple minutes and add<br \/>\n2 cups half and half<br \/>\nReserved cooked bacon<br \/>\nBring back to a simmer, stirring occasionally<br \/>\nServe with a sprinkle of the green onion tops for garnish.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3205\" title=\"6gcc\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/6gcc.jpg\" alt=\"6gcc\" width=\"600\" height=\"399\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/6gcc.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/10\/6gcc-300x199.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/> A perfect blending of the seasons: Late season summer-like veggies satisfying your fall craving for a hearty soup.
