This cool wet weather is destroying our tomatoes, but the cucumbers are just loving every minute. Consequently, we have more cukes than the Heinz pickle factory. Which is not at all a bad thing. Feeding anywhere from 10 to 20 people every night, nothing comes in more handily than a huge pile of a vegetable so easily turned into a variety of delicious salads. This one is a favorite around here.<\/p>\n<p>1\/4 cup cider vinegar<br \/>\n1 tablespoon sugar<br \/>\n1 teaspoon kosher salt<br \/>\n10-15 grinds of 5 peppercorn blend<br \/>\nWhisk together until the sugar and salt are dissolved, and add 1 large garlic clove, mashed well<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2719\" title=\"18\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/18.jpg\" alt=\"18\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/18.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/18-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Slowly whisk in 1\/3 cup good olive oil<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2720\" title=\"28\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/28.jpg\" alt=\"28\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/28.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/28-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Then add whatever herbs you have on hand. I used [starting from the bottom and working clockwise] rosemary, Greek basil, thyme, oregano and parsley. Chopped roughly &#8211; about 3 tablespoons total. You can use dried if that is what you have but use less as they will have a stronger flavor. Fresh is better of course, but not everyone has a place to grow their own herbs &#8211; don&#8217;t skip trying this just because you don&#8217;t have fresh herbs.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2721\" title=\"38\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/38.jpg\" alt=\"38\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/38.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/38-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Whisk the herbs into the dressing you have made.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2723\" title=\"48\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/48.jpg\" alt=\"48\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/48.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/48-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Cut a mild white onion into thin slices &#8211; this is a medium one, but it&#8217;s to taste really, so used how much you will enjoy.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2724\" title=\"57\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/57.jpg\" alt=\"57\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/57.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/57-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>I used two really long English cukes for this salad &#8211; it would take at least four if they were regular slicing cucumbers. <img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2725\" title=\"67\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/67.jpg\" alt=\"67\" width=\"600\" height=\"353\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/67.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/07\/67-300x176.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>For contrast, I peeled one, but left the skin on the other.
