A cornmeal problem &#8211; I&#8217;m addicted to stuff made with it. We have <a href=\"http:\/\/dlynz.com\/?p=1085\" target=\"_blank\">this<\/a>, and <a href=\"http:\/\/dlynz.com\/?p=543\" target=\"_blank\">this<\/a>.\u00a0 <a href=\"http:\/\/dlynz.com\/?p=460\" target=\"_blank\">Thes<\/a>e are amazing and <a href=\"http:\/\/dlynz.com\/?p=2135\" target=\"_blank\">these<\/a> are downright unreal.\u00a0 I am sure there is more, but today, we are going to make a cornbread that is so easy and so delicious that you are going to come back to the recipe again and again.\u00a0 Unlike other cornbread recipes, this one uses yeast for the leavening, so the texture is different and the time it takes to rise also allows the corn flavor to deepen.\u00a0 The yeast adds it&#8217;s own unique taste and the fact that it is a batter bread means very little work for you.<\/p>\n<p>I threw this together in a hurry, and didn&#8217;t think about blogging it until it was half done, so there are no shots of the early parts of the prep.\u00a0 No matter &#8211; it&#8217;s so easy that you really don&#8217;t need them.\u00a0 And don&#8217;t worry if you don&#8217;t have a stand mixer &#8211; I whipped it up by hand for years, and you can too.<\/p>\n<p>Scald 1\/2 cup milk and place in mixing bowl<br \/>\nStir in<br \/>\n3 tablespoons sugar<br \/>\n1 teaspoon table salt<br \/>\n1\/4 cup melted butter<br \/>\nCool mixture slightly<br \/>\nAdd<br \/>\n1\/4 cup very warm water<br \/>\n1 package active yeast<br \/>\n1 beaten egg<br \/>\n1 &amp; 1\/2 cups all purpose flour<br \/>\n1 cup yellow cornmeal<\/p>\n<p>Mix on medium speed for 2-3 minutes or stir by hand for about 4-5 minutes, until very well combined. The dough is going to be stiff and not nearly as smooth in apprearance as a kneaded bread.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2291\" title=\"1\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/1.jpg\" alt=\"1\" width=\"600\" height=\"437\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/1.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/1-300x218.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Spread evenly in a well greased flat, round baking dish or pan &#8211; this is a 9 inch pie dish, but a cake pan works nicely too. Drizzle olive oil over the top &#8211; about a teaspoon<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2292\" title=\"2\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/2.jpg\" alt=\"2\" width=\"600\" height=\"409\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/2.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/2-300x204.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Allow to rise for 45 minutes to an hour in a warm spot &#8211; it will puff up nicely. I actually let this go a longer than I should have.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2293\" title=\"3\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/3.jpg\" alt=\"3\" width=\"600\" height=\"409\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/3.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/3-300x204.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Bake at 375\u00ba for about 30 minutes. The top should be nicely browned and the bread should sound hollow when tapped. You can tell I let this one rise a bit too long because the middle collapsed a bit &#8211; not to worry though &#8211; it is still going to be mighty tasty. Cool slightly<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2294\" title=\"4\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/4.jpg\" alt=\"4\" width=\"600\" height=\"409\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/4.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/4-300x204.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Cut into wedges and serve with plenty of butter<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2295\" title=\"5\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/5.jpg\" alt=\"5\" width=\"600\" height=\"321\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/5.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/06\/5-300x160.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>This is best eaten soon after baking, but that is usually the case with any corn bread.
