{"id":2135,"date":"2009-05-23T09:35:32","date_gmt":"2009-05-23T13:35:32","guid":{"rendered":"http:\/\/dlynz.com\/?p=2135"},"modified":"2009-05-23T11:32:52","modified_gmt":"2009-05-23T15:32:52","slug":"peanut-butter-cornmeal-cookies","status":"publish","type":"post","link":"http:\/\/dlynz.com\/?p=2135","title":{"rendered":"Peanut Butter Cornmeal Cookies"},"content":{"rendered":"<p>Sounds crazy, doesn&#8217;t it?\u00a0\u00a0 I got the idea stuck in my head, and it just would not go away.\u00a0 I have learned not to ignore these impulses though.\u00a0An impulse that would not die\u00a0is\u00a0how I ended up with <a href=\"http:\/\/dlynz.com\/?p=435\" target=\"_blank\">Lemon Spice Brownies<\/a> after all, so I heeded the call this time too.\u00a0\u00a0 I&#8217;m so glad I did, because these are fantastic!\u00a0 Chewy and\u00a0peanutty\u00a0in the middle, crispy on the outside, and they just keep improving as the days go by.\u00a0 I am sure we would have eventually reached some kind of peanut butter cookie nirvana, but we ate them all\u00a0up before\u00a0we got there.\u00a0 We better get started, so you can find your own path to enlightenment too.<br \/>\nPreheat the oven to 350\u00ba and line baking sheets with parchment paper. You can lightly grease the baking sheets if you prefer.<br \/>\n3\/4 of a cup of soft butter<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2136\" title=\"17\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/17.jpg\" alt=\"17\" width=\"600\" height=\"366\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/17.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/17-300x183.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>1\/2 cup natural peanut butter<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2137\" title=\"27\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/27.jpg\" alt=\"27\" width=\"600\" height=\"366\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/27.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/27-300x183.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Beat together until completely combined &#8211; which takes a little longer than regular peanut better because natural has a denser texture. Then add<br \/>\n3\/4 cup brown sugar<br \/>\n1\/2 cup granulated sugar<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2138\" title=\"36\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/36.jpg\" alt=\"36\" width=\"600\" height=\"366\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/36.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/36-300x183.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Beat that a couple minutes, until it is very fluffy and then beat in<br \/>\n2 eggs<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2139\" title=\"46\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/46.jpg\" alt=\"46\" width=\"600\" height=\"366\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/46.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/46-300x183.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Add<br \/>\n1 &amp; 3\/4 cups all purpose unbleached flour<br \/>\n1\/2 cup yellow cornmeal [preferably stoneground, regular will work too]<br \/>\nMix until completely combined<br \/>\n1 teaspoon baking powder<br \/>\n1 teaspoon salt<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2140\" title=\"56\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/56.jpg\" alt=\"56\" width=\"600\" height=\"364\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/56.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/56-300x182.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Grind together<br \/>\n1\/4 cup salted peanuts<br \/>\n1\/4 granulated sugar<br \/>\nYou can do this in a food processor, with a hand blender or minigrinder, which is what I used. You want the peanuts to be mostly ground to about the texture of coarse cornmeal, but there can be some chunks too. I used a <a href=\"http:\/\/www.amazon.com\/gp\/product\/B0001598EI?ie=UTF8&amp;tag=dlyn-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0001598EI\">medium cookie scoop<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border:none !important; margin:0px !important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=dlyn-20&amp;l=as2&amp;o=1&amp;a=B0001598EI\" border=\"0\" alt=\"\" width=\"1\" height=\"1\" \/>emptying it into the palm of my hand and then turning the curved side into the sugar mixture, rolling gently to completely cover the top of the cookie. The sugar and peanuts will tend to clump a bit, so fluff it up with fork every couple cookies. The step sounds like more trouble than it really is, and it is so worth the little bit of bother, because this topping is part of what makes these really special.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2142\" title=\"6a\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/6a.jpg\" alt=\"6a\" width=\"600\" height=\"391\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/6a.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/6a-300x195.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Place sugar side up on the baking sheets, leaving a couple inches clearance all the way around.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2143\" title=\"63\" src=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/63.jpg\" alt=\"63\" width=\"600\" height=\"365\" srcset=\"http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/63.jpg 600w, http:\/\/dlynz.com\/public_html\/wp-content\/uploads\/2009\/05\/63-300x182.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/>Bake for right around 12 minutes, until the edges are beginning to brown nicely, but the center is still a bit soft. Remove from the pan and and cool on a rack.
