I adapted this from a recipe my Mom used to make called Quik-nik.  [please if you had this growning up &#8211; leave me a comment because other than my family, I have never run across anyone who has had it]  Quik consisted of Spam sauteed with peaches and served with a spicy potato salad somewhat like this one.  I have fiddled with this recipe a lot over the years but this is pretty much the final permutation I think.  This recipe will serve 4.<\/p>\n<p>3 lbs red or other waxy potatoes<br \/>Peel and cube.  Put in saucepan with water just enough to barely cover to which you have added 1\/2 teaspoon salt.  Bring to a boil over medium heat and simmer until done but not at all mushy.  <br \/>Meanwhile combine:<br \/>1\/2 cup lowfat or regular mayonaise<br \/>1\/2 cup lowfat or regular sour cream<br \/>1\/4 cup fat reduced buttermilk<br \/>2 tablespoons prepared mustard &#8211; a good dijon or full grain type is best, but the yellow stuff would work too. <br \/>1-2 teaspoons dry mustard &#8211; more if you like things spicier.<br \/>1\/3 cup diced onion or sliced scallions<br \/>1\/2 cup chopped celery<br \/>1 tablespoon chopped parsely<br \/>salt and pepper to taste<\/p>\n<p>Mix all ingredients for the dressing.  Drain potatoes when done and immediately add to dressing.  Stir gently and serve immediately.  Leftovers should of course be stored in the fridge and should be eaten cold &#8211; reheating will cause the dressing to separate.  We love this with pork chops that have been sauteed or grilled using a very spicy rub, followed by a last minute basting with a sweet-smoky bbq sauce.
