English Muffin Bread

There is no easier bread than this – you can have it mixed and in the pans in 10 minutes and after an hour or so of rising, your house will begin to be filled with the heavenly aroma of freshly baked bread, and for very little effort. The result is exactly what it sounds like – a bread with the taste and texture of really fine English Muffins – all holey and moist inside with a nice crisp crust. So – lets make some now and you can have it for Sunday morning breakfast.

The first step is to prepare the pans. You need two, 8″x5″ or so. Grease liberally with vegetable shortening and then sprinkle cornmeal in and tilt the pans to coat all surfaces and set aside.pansLike most bread recipes, the ingredients are pretty basic.ingredIn a large mixing bowl, whisk together
3 cups all purpose unbleached flour
2 packages dry yeast
1 tablespoon sugar
2 teaspoons salt
1/4 teaspoon baking sodadryHeat until very warm [you should just be able to hold your finger in it without discomfort]
2 cups milk
1/2 cup water
Stir into the flour mixturewet_inStir in
2 cups all purpose unbleached flour
One half cut at a time, until you have a stiff, rather shaggy looking batter.doughDivide evenly between the prepared pans and sprinkle the tops with additional cornmealinpanLeave in a warm spot to rise for 45 minutes to an hourrisingBake at 400ยบ for 30 minutes, remove from pans and cool.coolingSlice 1/2 inch thick. Yummy – see it is all filled with what the English Muffin people call “nooks and crannies”. Those are seriously delicious.slicedIt toasts up nice and crispy and the cornmeal sort of bakes into the crust making it chewy.toastedGo ahead and give it try – even the most novice baker can make this with no problem at all. You get the kudos for baking fresh bread and no one has to know how easy it was!

    I admit to being totally slovenly and having a bread machine. I really need some more bread machine recipes, though. I’ve only had marginal success. Way to aim for mediocrity, trannyhead! Marginal success with a bread machine! ;-)

    Love the bread recipe, but I’ve got to ask about your timer! My mom collects Fiestaware – the original stuff from the 50s and 60s – and I’d love to find one for her. Will you share?

    Hi Lisa – I have had that timer for about 5 years or so – I got it on ebay & spent too much for it. You could check there – it’s the only place I had ever seen them for sale.

    Wow – I just went to see if they have any now and the only one there is selling for $70! I did not pay that much! I would keep checking back – Fiesta licenses companies to manufacture these oddments & you never know when they will again.

    how much baking soda is it supposed to be? it says 1/4 baking soda but no measurement. . . i had gotten everything out to make the bread when i noticed that.
